You will delight to the complex flavors in Xinh’s Hot and Spicy Soup. Xinh features our fresh Meditteranean Mussels with a variety of other fresh seafood flavors in this wonderful example of Asian cuisine.
1 to 2 TBSP. vegetable oil 1 C crushed pineapple
4 cloves chopped garlic 1 C pineapple juice
1/2 C chopped onion 4 C water
1 TBSP. chopped lemongrass 1 pack Knorr Tamarind Soup Base
pinch of cayenne pepper 1 TSP. cumin
pinch of Thai chile, fresh or dry 1 TBSP. brown sugar, or to taste
8 oz Catfish filet, cut into chunks 2 - 3 stalks of celery, chopped
1 LB clams, washed 6 leaves of Chinese cabbage, sliced
1 LB mussels, debearded and scrubbed 2 Roma tomatoes, cut into chunks
1 LB shrimp, peeled and deveined 1 TBSP. cilantro
8 oz calamari, cut in thin strips 1 TBSP. Thai basil
1 TBSP. green onion, chopped 1 C bean sprouts, fresh
Heat oil in large pan. Sauté garlic, onion, lemongrass and cayenne pepper in oil until vegetables are transparent. Add catfish, clams, and mussels. Bring to a boil. Add prawns and calamari. Add all other ingredients, except cilantro, green onion and bean sprouts. Simmer for 5 minutes or until done. Add cilantro, green onion and bean sprouts. Serve with steamed rice or rice noodles.
