Skookum Inlet is hidden among forests of Douglas fir, western red cedar, hemlock and madrona. The remoteness of the inlet makes it a haven for shorebirds and forest creatures. If you found your way here by boat, it would probably be by accident, for Skookum is a small inlet off a larger inlet, which is next to the last of a series of long narrow inlets. It is on the way to nowhere. This is the place we have chosen to bring back harvests of the once threatened Olympia oyster. The tides rush into and out of the narrow inlet, covering then uncovering our Olys. This small intensely flavored oyster has a revered place in the hearts and palates of oyster connoisseurs. And the clean waters of Skookum Inlet are ideal for cultivating this delicacy.
