SPICY XINH BOATS

(BROILED MUSSELS ON THE HALF SHELL)

From the subtle, to the spicy, to the complex, our fresh Meditteranean Mussels stand up to a variety of flavors.  This spicy appetizer from our own chef, Xinh Dwelly, highlights these characteristics, and offers a beautiful presentation in the mussels’ own blue/black shells.

 INGREDIENTS

5# MEDITERRANEAN MUSSELS

3 C WATER

4 CLOVES GARLIC, PEELED

½ C GREEN ONION, COARSELY CHOPPED

½ C RED PEPPER, COARSELY CHOPPED

½ C ONION, COARSELY CHOPPED

JUICE FROM 1 LEMON (OR 1 TBSP LEMON CONCENTRATE)

2 TBSP SOY SAUCE

1 TSP SUGAR (OR HONEY)

SALT & PEPPER TO TASTE

1 C GRATED PARMESAN CHEESE

¼ C BUTTER, SOFTENED

DIRECTIONS

Steam Mussels until opened.  Drain and remove meats, save the shells.

Mix and blend all other ingredients in a blender to coarse meal consistency.

Preheat the oven on broil and place the oven rack at the top of the oven under the broiler.  Place each Mussel meat in half a Mussel shell and arrange on a cookie sheet or a large baking dish.  Sprinkle on TSP of spice mixture on top of each meat boat.  Broil only until light brown, about 10 minutes (watch carefully so they don’t burn).  Serve while hot for a great appetizer.
