Garlic French Fries Topped With Octopus & Spicy Paprika Aioli By Ali Hooke

"This recipe serves as an Ode to a dear friend and our favorite bar while we worked in restaurants together in San Francisco: ABV. Many nights we enjoyed this special dish that was regularly on the menu, fries with octopus. This recipe is a combination of the memories of that dish and my friend’s always delicious staple on her menu at her restaurant in Kauai: patatas bravas. This dish offers a delightful fusion of flavors and textures, combining the crispness of French fries with the tenderness of octopus and the heat of a spicy aioli. Garlic French Fries Topped with Canned Octopus and Spicy Paprika Aioli."

Serves 4

Ingredients:

For the Fries:

● 1 bag of frozen fries

● 4 cloves garlic, minced

● 2 tablespoons olive oil (.5 tbsp)

● 1 tablespoon chopped parsley

● Salt to taste

For the Topping:

●1 can Ekone octopus, drained

● 1 tablespoon fresh lemon juice

● 1 tablespoon chopped parsley

● Salt and pepper to taste

For the Spicy Paprika Aioli:

● 1/2 cup homemade aioli, or mayonnaise

● 1 tablespoon lemon juice

● 1 teaspoon smoked hot paprika

● Salt and pepper to taste

Instructions:

Prepare the Fries:

● Preheat the oven to 425°F (220°C).

● Spread the fries on a baking sheet lined with parchment paper.

● Bake for 20-25 minutes, or according to package instructions.

● Once the fries are crispy and golden brown, toss them in a large bowl with the minced garlic, olive oil, salt and parsley.

Prepare the Octopus Topping:

● In a pan on medium heat, lightly sear the octopus until you see some color and it is warmed through.

● Remove from heat and toss with lemon juice and parsley.

● Season with salt and black pepper to taste.

Prepare the Spicy Paprika Aioli:

● In a small bowl, whisk together aioli, lemon juice, smoked paprika and salt until smooth.

● You can adjust the spiciness of the aioli by adding more or less paprika to your tastes.

Assemble the Dish:

● Place the baked garlic fries on a serving platter or individual plates.

● Top the fries with the seasoned octopus.

● Garnish with the spicy paprika aioli and parsley. Serve Immediately and enjoy
