Cacio E Pepe Inspired Manila Clam Garlic Bread

Caccio inspired clam garlic bread
Serves 4 as a side
- 1 loaf of crusty white bread
- 6 tablespoons unsalted butter, tempered
- 1 lb cooked manila clams, cooled, and roughly chopped (can be done a day ahead of time)
- 3 garlic cloves,finely grated
- Zest from one lemon
- 3 teaspoons black pepper
- 2 teaspoons salt
- 1 tablespoon chopped chives
- 1 cup grated ricotta salata, plus more for crumbling
With your hands mix your zest, pepper, cheese, salt, and chives with your butter until it’s completely combined and smother both sides of bread and sprinkle chopped clams evenly over each side. Match the buttered breads and wrap in tin foil before placing on the grill to melt for ten minutes per side.
Remove from the grill, allow to cool for about seven minutes, slice and serve!
