Mother's Day Pink Champagne Mignonette

  • 6 oysters
  • 2 tablespoons finely chopped shallot
  • ¼ cup raspberry champagne vinegar 
  • ¼ cup sparkling pink wine
  • 1 teaspoon black pepper
  • 2 teaspoons chives 

Makes 6 oyster appertifs 

Simply shuck your oysters and set aside.  Whisk your shallot with vinegar, sparkling wine, and black pepper.  Find 6 champagne flutes or small cocktail glasses wherein oyster shells can balance on the mouth of the cup.  Pour sparkling wine into each vessel before resting an oyster on each glass and spooning about 1 ½ teaspoon of mignonette into each oyster before carefully serving to mom and their company.
