We all know those rumors about oysters’ so-called aphrodisiac powers, but supernatural or not, the bite-size bivalve is always our preferred way to begin a meal. Try our romance-themed mignonette with blush colored pomegranate and a tingle of sparkling rose to kick off your dreamy Valentine’s Day dinner.
Serves 2
Ingredients
A dozen oysters, cleaned and shucked
- 2 tablespoons chopped parsley
- ¼ cup chopped pomegranate seeds, in their juices
- 1 shallot, finely chopped
- ¼ cup Champagne vinegar
- 3 tablespoons sparkling rose
Instructions
Combine above ingredients in a small mixing bowl, and serve alongside a platter of oysters and cut lemon. Dollop generous spoonfuls of mignonette onto each oyster and enjoy.
