2 cups Greek yogurt
¼ cup fresh parsley
¼ cup fresh basil
2 tablespoons za'atar seasoning
Juice and zest from one lemon
2 teaspoons salt
4 cans Ekone Albacore tuna
1 package of Hawaiian rolls (12 in total)
8 slices Muenster cheese
Instructions
In the body of a food processor or blender combine the yogurt with herbs, za’atar, lemon zest and juice and salt. Pulse until smooth but you can still see flecks of green herbs. In a medium-sized bowl mix the yogurt sauce with your Ekone Albacore Tuna, while breaking tuna chunks apart with the back of a fork. You can either complete your sandwiches from here or seal the bowl of tuna and build your sandwich up to 24-hours later. Also, you can use the mixture as a cracker or chip dip if you’d rather.
When you’re ready to make your sandwiches, heat your oven to 350° and line a baking sheet with tin foil. Slice the entire slab of Hawaiian rolls down the middle using a bread knife and remove the top half. Spread the cheese evenly over the bottom slab or rolls then spoon and spread the tuna mixture over the top. Top the sandwiches with the top of the rolls and cover with tin foil and bake for 15-minutes. Remove the tin foil and cook uncovered for an additional 10-minutes. Serve immediately.
