Spinach and Chevre Rockefeller Oysters

Want to serve up something special for an at-home date night? Or perhaps show off slightly for a dinner party… all without breaking a sweat (or even bothering to shuck)? Let our frozen, pre-shucked oysters be your guide to impressing without even needing to put an apron on. All you’ll need is a big bowl, and the broil setting of your oven to make this rockefeller sing.

Ingredients:

12 pre-shucked oysters

8 oz chevre cheese

2 bunches spinach, washed, blanched, wrung, and chopped

Zest of 2 lemons

2 teaspoons chili flakes

1 teaspoon black pepper

2 teaspoons kosher salt

½ cup panko breadcrumbs

Ready your oven and set to broil. Line a baking sheet with foil and spread your oysters evenly over the pan. In a large bowl combine the remaining ingredients and allow to chill in your fridge for at least fifteen minutes.

Once the mixture has hardened slightly, press 2 tablespoons worth of the chevre mixture into the tops of the pre-shucked oysters. Bake in your oven for 5-7 minutes, or until their tops are golden brown and the cheese appears cheesy. Serve immediately.
