Geoduck Salad

  • 1 Taylor Geoduck
  • 2 teaspoons lemon juice
  • 2 teaspoons olive oil
  • 1 tablespoon sweet chili, finely minced
  • Salt and pepper, to taste
  • 6 mint leaves
  • Kale or collard greens, lightly blanched


  • Clean geoduck by blanching in boiling water for 10 seconds, place directly in an ice bath
  • Cut the shell off the meat and remove the belly meat (save this for a delicious chowder)
  • Remove outside skin from geoduck
  • Slice the neck meat paper thin
  • Toss greens with lemon juice and olive oil
  • Add geoduck, chili, salt, pepper and mint
  • Serve and enjoy
